This is the single barrel version of Weller wheated bourbon from Buffalo Trace. That means each barrel should taste slightly different. It's always bottled at 97 proof. There's no age statement, which means that it must be at least 4 years old, by law. I doubt it's more than 8 years old. Otherwise, the single barrel would be cutting into the C.Y.P.B. territory. More than likely, it's between 6 and 8 years old. Considering the other versions of Weller on the market, it's hard to understand the purpose of this bourbon. Why does it exist? Technically, there was no specific single barrel version of Weller before this product was introduced, but there are single barrel store picks of other Weller versions. So again, why does it exist? Quite simply, to make money. Bourbon connoisseurs will buy it, just to taste how good it is. Weller Single Barrel is allocated, making it hard to find. Expect to pay hundreds of dollars over list price.

I finally understand why this product exists. It serves to showcase how single barrels can taste so differently. Now, I don't have another single barrel upon which to compare, but this single barrel tastes like no other Weller product I've ever had. There are so many atypical bourbon flavors, most notably olive oil. The savory fruit mingles with tangy lemon and sweet blueberry. Vanilla, cake and oak provide the background for this complex and extremely interesting flavor profile. It's like Kentucky meets the Mediterranean. The finish is longer and hotter than expected for its relatively low proof. Normally, I like single barrels to have a higher proof to tease out the individual flavors, but this bourbon has no problem expressing itself. I recently had an interesting dessert at a local restaurant. It was a lemon, blueberry, olive oil cake, and this Weller Single Barrel instantly reminds me of that unique dessert. It's fruity, tangy and sweet. Hence, I suggest pairing it with The Lemon Song by Led Zeppelin. This is a rather polarizing bourbon. While it's complex and interesting, it's also very strange. It's not something I'd want every day, even if the price was right. It would depend upon my mood and perhaps what I was eating. Some Bourbon BellaVitano cheese comes to mind. Weller Single Barrel is an annual release. It expect it to taste differently each year.
